Description

As with all cooked dishes, the raw ingredients are just as important as the cooking. These ribs are winners on both fronts. The meat is top quality and has been cooked slowly for hours in its own juices. The result is a delicious meat with an aroma that awakens the senses. It is a dish that would normally take hours to cook, but can be reconstituted in no time. In addition, chefs can add their own personal touch, either by adding accompaniments or by plating it up in unique way.

Recomendation

We recommended defrosting the vacuum-packed product in the refrigerator before reconstituting. Once defrosted, place the vacuum bag in a microwave for 5 minutes or warm gently in a bain-marie at 70ºC for 15 minutes. Then open the bag and bake the ribs and juices in the oven at 180ºC for 12 minutes, or pan-fry. Use the juices in the bag as a base or to make sauces, or reduce and thicken it.
