RICE CASSEROLE

Description

It includes the base and main ingredients: squid, pork rib, red pepper, green pepper, peas, onions and leek. Restaurateurs can add other ingredients to customise the rice and give each dish a personal touch. This concept allows you to prepare a rice dish very quickly and ensure that the quality and flavour are constant throughout the season. There is no waste, which allows you to optimise raw material and staff costs.

Recomendation

Defrost in the fridge for 24-48 hours before use (temperature between 0ºC and 4ºC). Place in a suitable container and stir constantly until it comes to the boil. Add the rice (90-80g per person) and the complementary ingredients (optional), then cook for 16-18 minutes, the first 8 minutes over a high heat and the remaining time over a low heat (or 8 minutes over a high heat and 8 minutes in the oven at 180-200ºC). Remove and let stand for 2 minutes before serving.
